Tabouli Salad


Oh how I love Tabouli!! It is a childhood staple of mine. I grew up eating this traditional middle eastern salad, made of mainly parsley, mint, and wheat. I personally like to make it even healthier by using hemp seeds instead of wheat! It is so refreshing and healthy, making it a wonderful addition to your lunch, dinner, or snack time menu!
Parsley is a nutrition powerhouse. It is a full of vitamins A, B12, C, and K. It helps to flush out excess fluid from the body supporting your kidneys too! Eat more parsley to boost your immune system and help your nervous system.
Ingredients:

2 cups organic parsley chopped
3-4 tbsp lemon juice
1/2 cup fresh mint chopped fine
5 medium size scallions
1/2 cup pine nuts
1 cup hemp seeds
3 tbsp olive oil
1/2 tsp Himalayan salt
1 cup chopped organic firm tomatoes deseeded
1 1/2 tsp all spice
1 tsp garlic powder

Directions:
In a large bowl, combine all the ingredients. Mix well. You can choose to toast your pine nuts in a frying pan prior to adding them for added flavor, however it is not necessary.

Once mixed, you can serve right away or allow to chill in the refrigerator for about 10 minutes to allow all the flavors to settle together.
