Holiday Citrus Salad

This is a great salad to make year round, but I love to make it for the holidays! The beautiful colors of the pomegranate, oranges, purple cabbage, and radishes draw your eye to this gorgeous salad, and will certainly start your mouth watering! This salad just looks special. I love the citrus and tartness of the pomegranate in this salad because it brings a fresh and clean element to your holiday table that is so often full of heavy savory dishes. It is a wonderful option for those guests who are looking for something a little lighter, while still keeping the feeling that they are dining on something special for the holiday season. The dressing recipe I have included complements this salad very well as well as a citrus-poppyseed dressing if you are looking for something different.
Ingredients:


6-7 cups of baby swiss chard, kale, spinach, and mixed greens
1 cup of pomegranate
1 avocado
1-2 naval oranges
3/4 cup sliced radishes
1 cup of chopped purple cabbage
2 tbsp fresh chopped basil
Dressing:
1 cup olive oil
1/4 cup of lemon juice
1 1/2 tbsp honey
1/2 balsamic vinegar
1 tsp oregano
1 tsp pepper
Directions:
Combine all ingredients into the salad serving bowl in layers so the ingredients are evenly distributed in the salad.
