Healthy Baked Meatballs

These meatballs are one of my husband’s favorite recipes. He requests them frequently, and because they are so easy, I do not mind making them all the time! These meatballs are extra healthy made with gluten free oats instead of bread crumbs, and are baked instead of fried in oil. I add spinach and sunflowers for extra nutrition and crunch. They are truly delicious! We not only eat them with pasta, but also with eggs in the morning or a salad in the afternoon! The whole family will enjoy these meatballs. They are a fun recipe to get the kids involved with as well.

 

Ingredients:

5 cups ground meat: chicken, turkey, and or beef (I usually do a mix of turkey and beef)

1 medium onion

1 tbsp coconut oil

1 head of garlic/ 1 tbsp minced garlic

3/4 cup grated parmesan cheese

3/4 cup sunflower seeds

2 large organic eggs

1 tbsp black pepper

1/2 tbsp himalayan salt

2 cups chopped organic spinach

2 tbsp fresh basil finely chopped

1 tsp chili powder

1 tsp red pepper flakes

1 1/2 cup of gf organic rolled oats

3/4 cup almond milk

 

Directions:

Preheat the oven to 350 degrees. In a medium skillet, saute the garlic, oil, and onion until slightly browned.

Line two baking sheets with aluminum foil. With your hands, form the desired size of meatball you like, and place on the baking sheet.

Place in the oven for about 25-30 minutes until fully cooked through.

Serve hot with your choice of pasta and sauce!

I personally have been loving this chickpea pasta from the company Banza. It’s a great healthy alternative to traditional pasta, with more protein and fiber and half the carbs! It tastes great and is gluten free too! How amazing is that!
