Baked Coconut Almond Brioche French Toast


We love french toast in our house! Breakfast food is our jam, but you know it’s a special day when french toast is on the menu! This gorgeous baked french toast is great for a holiday morning, brunch, or special surprise breakfast! The fact that you can make this dish the night before and then pop it in the oven in the morning makes it tastes even better, because it is so easy to make! I love making this the night before Christmas morning, so that I can bake it in the oven and enjoy my morning, and then gather around the table when it’s ready! It will make your kitchen smell amazing!
Ingredients:

1 loaf of Brioche bread
8 organic eggs
1 tbsp vanilla extract
1/4 tsp nutmeg
1 tbsp butter (to grease the pan)
1/2 tbsp cinnamon
1/4 cup coconut flakes
1/4 cup shaved almonds
1 tbsp light brown sugar
3/4 cup cream
1/2 cup almond milk (or milk of your choice)
mixed berries for garnish
Directions:
Slice the bread into 3.4 of an inch think slices.

Grease the 8-12 inch pan with butter to prevent the toast from sticking. In a large bowl, whisk the eggs, vanilla, cream, milk, nutmeg, and 1/2 tsp of cinnamon. Soak each piece of bread in the mixture, then place in the pan. Once all the pieces of bread are placed, pour any remaining mixture atop the bread, and sprinkle with remaining cinnamon, coconut flakes, almonds, and brown sugar.

Add in the berries as colorful garnish now, or wait until the toast is baked. Cover the pan with foil, and place in the refrigerator overnight, or for at least two hours. Heat the oven to 425 degrees, and place the french toast in the oven to cook for 20 minutes covered. Remove the cover, and cook until slightly golden brown.


Sprinkle with some powdered sugar if desired and serve warm with pure maple syrup. The great thing about this dish is that you can make it the night before and then pop it in the oven the next day for a quick beautiful breakfast!
