Cauliflower Mashed Potatoes

These mashed potatoes are so creamy and lovely, and half the calories because of the wonderful cauliflower! Your guests will love this healthy alternative to regular mashed potatoes.
Ingredients

about 14 gold potatoes
one head of organic cauliflower
4 tbsp of butter
rosemary, chives, or parsley flakes for garnish
optional: sour cream
Directions
In a large pot, boil your potatoes until tender when pierced with a fork; about 25 minutes.

Clean and chop the cauliflower.

Add it to a pot of boiling water, and cook until tender; about 10 minuets.

Once the cauliflower is cooked, add it to your standing mixer, and mash.

Add the butter to the cauliflower. Once your potatoes are cooked, remove the skins, and gradually add the potatoes to the cauliflower and butter. This would also be the time to add sour cream if you so choose.


Once your potatoes and cauliflower are well blended and mashed, pour them into a serving bowl, and garnish with rosemary or parsley flakes.
