Pear Arugula and Brie Flatbread


One of my favorite fruits that I don’t think gets as much street-cred as I think it should is the pear! I have loved pears since I was little, especially when the suckle pears where in season! My mother would always make sure to put at least two in my lunch box for a delightful treat at school. They are great for desserts, snacks, salad additions, and of course flat breads!
I have combined a few of my favorite ingredients to make this amazingly simple but incredibly delicious flatbread! I don’t always eat cheese, but when I do, I eat Brie! It’s a guilty pleasure that I rarely indulge in, but when I do, it’s so worth it! With the added flavors of toasted walnuts, the peppery arugula, and the cinnamon pears, it will be hard to stop yourself from finishing off this whole flatbread yourself! I like to make this as an appetizer, an addition to lunch, or through an egg on top for a beautifully European inspired breakfast!
Ingredients:

1 premade flat bread (you can use pizza dough or pita as well)
3 large bosc pears skinned and sliced
3-4 cups of organic arugula
1 tsp cinnamon
2 tbsp organic butter
1 tbsp olive oil
1/2 tsp pepper
1/2 tbsp honey
1/2 chopped walnuts
2-3 oz brie
Directions:
Preheat the oven to 400 degrees. Melt the butter in a sautepan on medium heat.

Add the pears and sprinkle with cinnamon. Mix well.

Cover and let simmer for about 3 minutes, making sure to occasionally stir so that the pears do not stick to the pan. Next, add in your walnuts.

While the pears continue to cook on low temperature, place your arugula in a bowl, and dress it with the pepper and olive oil.

Place the flatbread on an uncreased baking sheet, then spread the arugula over the flatbread.

Slice the brie, and top it onto the arugula.

Layer the pears over the brie, and place in the oven for 12-15 minutes until the crust turns a golden brown and the cheese melts.

Drizzle the honey over the flatbread. Use a pizza cutter to slice the flatbread into small squares for your guests. Place on a platter and serve! Some people may choose to place the arugula on top of the pears after they have baked in the oven, however putting the lettuce on the bottom makes it a little less messy and easier to eat.
