Protein Energy Bites


These little bite size balls are great as a snack or sweet treat that will give you lots of energy and protein. They require no baking, just simply mix and store in the refrigerator. They are great for athletes on the go! Normally these type of protein energy bites you see are loaded with sugar from dates, maple syrup, etc. However these babies are all about the protein and natural sweetness in almond butter.

Ingredients:
2 cups of almond butter (not roasted)
2 tsp cinnamon
1 tsp vanilla extract
1 cup raw walnuts crushed
1 can of garbanzo beans drained and rinsed
1 tbsp honey
pinch of pink Himalayan salt
Directions:
Put all your ingredients into a food processor and mix well.

Using a spoon or a small ice cream scoop, scoop out your batter and roll into bite size balls.

Leave plan, or sprinkle with cinnamon, cacao nibs, shredded coconut flakes, or hemp seeds.

I sprinkled mine with some cinnamon and salt. Then place in the freezer for 30 mins before serving. I like to store mine in a freezer bag once they are hardened. Then whenever I am in need of a power boost before or after a workout or a taxing day, I just go grab one of these delicious bites! My husband loves these! As an athlete who is constantly working out and burning calories, these protein bites are filling and satisfying.

You can use different nuts like walnuts as well, and add in chocolate chips, dates, or even rolled oats to your batter for a little bit more of a crunchy consistency.
