Breakfast on the Go Muffin Tops

Rise and Shine Sleeping Beauty!
We all have heard that breakfast is the most important meal of the day. But sometimes you sleep threw your alarm, your hair is doing something weird that takes an extra 10 minutes to figure out how to tame, you can’t find anything you like in your closet, the kids are giving you a run for your money testing your patience, or your just not in the mood to make something healthy. You want to just grab something and go! These every day circumstances are what make it easy to go for an unhealthy choice first thing in the morning.
So why not set yourself up for success! When you are prepared for life, it becomes easier. And nothing can be easier than this recipe! It is completely fool-proof! They will leave you feeling satisfied and are full of nutrients that are wonderful for pre/post workouts, or convenient healthy snacks.
Ingredients:
2 organic ripe medium bananas
1/4 cup organic virgin coconut oil
1 tsp salt
2 tsp pure vanilla extract
1 tsp cinnamon
1 tsp baking powder
2 cups of organic gluten free oats
Optional add-ons:
dark chocolate chips
walnuts
shaved almonds
dried cranberries
blueberries
coconut flakes
chia seeds
1 tbsp nut butter
protein powder
Directions:
Preheat your oven to 350 degrees. In a medium size bowl, smash your bananas with a fork or potato smasher. Add in your salt, baking powder, vanilla, cinnamon, and your nut butter if you want it. Mix well. You can choose to put your Add-Ons in the batter, or wait to sprinkle them on the top. Then, place the batter into a blender or food processor, and add the oats. Pulse until well mixed. If you choose not to use a blender or food processor, your muffins will turn out to be a little more granola-like! I switch it up each time I make mine. When I blend everything, I use cupcake liners. When I just mix it all in a bowl, I will line a cookie sheet with parchment paper. Either way, they come out mouth watering! Place in the oven for 20-25 mins. Let cool and ENJOY!
