A Soup Cure All

Why not make my first post in food about the one thing we all love growing up. The main thing we crave when we aren’t feeling well. Something that our mom can whip up as a cure all to any ailment from a cold to a heart-break…. SOUP! There are a lot of traditional recipes out there from chicken noodle to lobster bisque to Italian wedding. My mouth waters just thinking about these comforting bowls of joy! I wanted to make a cure all recipe of my own, something with real wholesome ingredients that was filled with natural goodness. The result…. DETOX SOUP! Remember organic ingredients are best, and you will need a BIG pot!

Ingredients

1 large container of organic low sodium vegetable broth

1 yellow onion finely chopped

1 tbsp minced garlic

1 ½ cups chopped carrots

1 tbsp of coconut oil

½ tbsp of black pepper

¾ cups of Italian parsley

2 small rutabagas

1 cup of kidney beans/ or white cannelloni beans

4 chopped plum tomatoes

1 chopped zucchini

3 cups of chopped dino kale

the juice of 1 large lemon

1 tbsp of apple cider vinegar

1 bay leaf

sprinkle of cumin, rosemary, thyme (to your taste.. I used about a tsp of each)

Directions

Sauté yellow onion, 1 tbsp minced garlic, carrots, coconut oil, and a sprinkle of black pepper, on med-high heat for about 5 mins.

Add Italian parsley, peeled and chopped rutabagas, kidney beans or white cannelloni beans, plum tomatoes, zucchini, dino kale, lemon juice, apple cider vinegar, a sprinkle of cumin, rosemary, thyme, and 1 bay leaf! Let simmer for 25 mins till the rutabagas are soft.

Add 3-4 cups of purified water as it simmers to keep veggies covered and to lend more broth.

Health Benefits

Kale has high levels of vitamin C, K, A, B-6, and iron!

Apple Cider Vinegar has acetic acid which is an antimicrobial that can kill some types of bacteria.

Rutabaga is high in vitamin c, and rich in potassium and manganese for energy, fiber, thiamin, vitamin b6 which helps nervous system, calcium and magnesium, and phosphorus which helps metabolize proteins and sugars!
