Ingredients:

crust:
1 large egg
1/2 cup unsalted butter at room temperature
1/4 tsp salt
1 1/2 cups of all purpose flour
1/4 cup sugar
filling:
1/2 cup apricot preserves
1 1/4 cup organic apple sauce
3 medium size apples- Granny Smith
1 tbsp butter
2 tbsp lemon juice
1/2 tsp cinnamon
4 tbsp sugar
Directions:
To make the crust, first place the butter in your mixer and soften it.

Next, add the sugar and beat until combined and fluffy. Slowly add the egg until mixed well, try not to over beat. Add in the flour and salt and beat until a dough ball forms. Place the dough on a sheet of plastic wrap, and form a smooth round disc with your hands. Cover the dough completely with the wrap, and place in the refrigerator for 2 hours.

Preheat the oven to 400 degrees. Once chilled and firm, place the dough on a floured counter top and roll it out with a rolling pin.

Try to make sure the dough keeps it’s circular shape as it expands so that when it is place over the tart pan, it is evenly distributed.

Place the dough over the 8-9 inch tart pan with a removable bottom, and carefully press the dough into the pan evenly.

With a fork, puncture some air holes into the dough so that it cooks evenly without bubbles. Cover and place in the refrigerator once more for 20 minutes.

Place the crust in the oven for 20 minutes until it turns a golden brown. Remove from the oven and let cool. Peel and slice the apples into 1/4 inch slices. Try to make them all a uniform size and thickness. Place the apples in a bowl and cover with the lemon juice.

Melt the butter in a large frying pan, and place the apples, cinnamon, and sugar on medium heat.

Allow to cook for 4 minutes until the apples become slightly softened.

Place the apricot preserves in a small bowl with a tbsp of water and microwave for 15 seconds, warming it slightly. Brush the apricot on the pastry crust evenly, saving some for the apples as well.

Spread the applesauce evenly in the crust.

Then, arrange the apple slices in concentric circles, or in the desired design.

Brush the leftover apricot glaze over the apples and crust. Cover the crust with foil so the crust won’t burn. Place the tart pan on a larger baking sheet and bake for 25 minutes.

Allow to cool for ten minutes, then dust the top with powdered sugar, and enjoy this beautiful treat!
